From earlier times.
British dragon legends came primarily from Germanic peoples (British people are primarily descended from the Germanic tribes of the Angles and Saxons). Germanic dragons in particular had wings. Nordic dragons, Mediterranean dragons and Eastern Asian dragons in ancient times normally were not described as winged.

Instead of giving a history lesson, you might want to write a short story about “the origin of dragons” – a sort of fairy tale of the sort found in Kipling’s “Just So Stories” (that is available free online if you need to see examples).
Knights, on the other hand, actually existed. Knights were – in ancient times – either the landowners (who could afford to purchase extremely expensive armor), soldiers of very wealthy landowners (who could afford to purchase such armor for their elite soldiers), or individuals who had exceptional success in battle and because of that were “elevated” to a position of knighthood (which was usually, but not always, accompanied by a gift of land and/or armor).
Knights really came about because of the feudal system – each landowner (called a “noble”) earned income from the land under his control (whether by farming or mining or whatever). Each noble was required – by his superior – to supply a certain number of armed men, and/or to keep ready a certain number of men trained as soldiers. So – each and every noble had their own little trained army.
Naturally, the nobles – being wealthier than their non-land-owning subordinates – had the best in military equipment and also (usually) the best of training. They could literally afford to spend hours every day in military exercises while their subordinates spent those same hours working the land.
Knights, in a sense, were the “special forces” of the medieval world: those with the best training and the best equipment, which they could afford because they owned land, or because their superior (who owned the land) was so wealthy that he could supply such equipment and training for them.
